For example, for a maritime celebration it is enough to decorate a cake in shades of blue with a relief texture that imitates waves; for a Provence theme, a lilac palette is used, etc.

There are the following options for decorating the side of a dessert with an ombre effect.

  1. Pastry bag or syringe. You can make simple patterns from the cream, which, in combination with the ombre effect, will sparkle with new colors. At the bottom of the dessert, curls or roses of rich color are drawn, followed by a paler layer, and so on until white.
  2. With spatulas. The surface of the cream cake can be decorated using pastry spatulas. If you don’t have them at hand, you can use ordinary cutlery - a spoon, fork or knife. By making different movements, you can gradually learn to create the desired texture.
  3. With a spatula. The surface of the cake can be made smooth by using a flat spatula or spatula. This option is usually chosen if you plan to add other decoration elements.

You can experiment with different methods, especially if the cake is multi-tiered. For example, the lower part can be decorated with cream patterns, and the upper part can be left smooth, adding additional decor.


The ombre effect can also be applied in this way: the lower part is completely decorated with a rich shade, and then a smooth transition to pale tones is made diagonally, that is, the closer to the top, the narrower the part is painted. It turns out that the colored ombre comes from below, and white from above.

Decorating ombre cakes is most often done with flowers. They can be made of cream, marzipan, chocolate or mastic, but live buds look especially impressive. If you spend a little more time, the plants can also be arranged in order from pale to saturated shades. Another popular decor option for this dessert is fresh fruits and berries, but you need to choose them in the same shade as the cake.

For example, black currants, grapes, blueberries or blackberries are suitable for a purple base, strawberries, cherries and raspberries for a pink or red base, peaches, oranges or mangoes for an orange base, etc.

From mastic


Mastic is an elastic confectionery mass that can be purchased ready-made or made independently. To decorate the dessert, a layer is rolled out of it, like dough, which is used to cover a prepared stack of cakes. The surface is leveled, resulting in almost perfect edges.

If you have chosen an ombre mastic cake for your celebration, please note that when decorated with this material, one tier can be decorated with only one shade, since the cakes are covered with a single layer.

Ombre cream wedding cake is more common than others. The reason for this is simple: even on one tier you can use several shades at once, resulting in a more interesting decor. In addition, it is possible to create an interesting texture on the cream, in harmony with the smooth transition of shade from pale to rich.

When choosing this option, it is important to ensure that the cream is not too greasy or heavy. Since it is used in large quantities for decoration, guests may simply not be able to finish their piece, especially if the main menu was high in calories.

How to beautifully and evenly assemble the cake and evenly cover it with cream to get an excellent preparation for further decoration has already been discussed here and here. This time we will talk about covering the cake in Ombre style. This is a rather self-sufficient type of cake decor; it looks very festive and impressive.   • assembled cake-blank (see how to assemble it here);
  • turntable (not necessary, but will make your life a lot easier);
  • gel dyes of desired colors;
  • any thick cream with which you plan to decorate the cake (cream cheese, butter cream, recipes can be found here);
  • pastry bags;
  • putty knife.

First, after assembling the cake, you need to cover it with a thin layer of butter cream - this is necessary in order to “glue” all the crumbs and the next layer will lie flat. Apply a layer of cream and put it in the refrigerator for an hour to cool.

At this time, prepare all the necessary ingredients. We divide the finished cream into three parts, each coloring it in the desired shade. I used Americolor Green Mint in varying degrees of concentration and added a drop of black dye from the same company to one part of the cream for the deepest and darkest shade. Fill three pastry bags with cream.

We take the cake out of the refrigerator and place it on the turntable.

We begin to deposit the cream on the cake from bottom to top in a spiral from dark to light shade.

In this way, fill the sides and top of the cake with cream, changing the color of the cream from dark to light.

Use a spatula to move a little along the sides of the cake, thereby mixing the shades so that there are no sharp transitions.

We use a spatula along the top of the cake, leveling the cream over the entire surface.

Now we need a metal scraper to level the surface and finally “blur” the color. We place it at an angle of 90 degrees to the sides of the cake and, without pressing too hard, press it against the cake and with the other hand begin to turn the table. Be careful not to remove too much cream; your task is not to remove the excess, but to smear the color. Every time you remove the scraper from the cake, wipe it clean with a napkin so that subsequent strokes do not spoil the surface.

We make a couple of such turning circles, then use the same scraper to level the top.

That's it, the Ombre style coating is applied, the cake is ready for further decoration.
