Master Class. Cakes made of polymer clay with a smooth color transition.

The variety of wedding cakes in the confectioners' catalog is amazing: they are made to suit every taste and decorated in accordance with any style. Among the most popular desserts, ombre wedding cake stands out.

The finished dessert looks delicate and elegant, and does not require an abundance of other decorations, which reduces the overall cost.

Any pastry shop can offer future newlyweds a suitable option made using the ombre technique, but if desired, the bride and groom can master it on their own.

Why do you need dessert?

ombre wedding cake 9Almost no celebration takes place without tea and dessert, because after a hearty menu of main courses, appetizers and salads, you want to treat yourself to something sweet.
Most couples decide that there should be a cake at their wedding, because otherwise the guests will be disappointed. Dessert is expected not only because of the taste, but also because of the impressions - a richly decorated delicacy always attracts attention and is remembered better than anything else. The tradition of treating guests to tea and cake dates back to four centuries ago in Paris. Since then, wedding baked goods familiar to different nations - bread, flat cakes, pies, loaves - began to gradually be replaced by a sweet dessert. The newlyweds, who manage to surprise friends and relatives, and the confectioners, who have the opportunity to show their highest skills, and the guests, who taste a pleasant and beautiful delicacy, are happy.

The cake along with tea is served at the end of the banquet, when the main menu dishes have come to an end, but the celebration itself is still in full swing. The dessert is served by the administration of the establishment accompanied by ceremonial music, after which the newlyweds together cut the delicacy into equal pieces and distribute it to the guests. It is believed that the sweet end of the evening helps to attract happiness and prosperity into the life of a married couple.

Interesting! Find out what other original cake options there are. For example, a dessert with fruits and berries looks very beautiful.

Decoration Features

The essence of the ombre effect is that one color is selected for decoration, and a smooth transition is made from a pale shade to a saturated one. It looks unusual and elegant, which is why this technique began to be used for wedding cakes.

This cake is suitable for any wedding, you just need to choose the right shade. For classic celebrations, pastel colors are usually chosen - pink, blue, mint, yellow, lilac. For stylized weddings, a dessert with an ombre effect is also suitable. For example, for a maritime celebration it is enough to decorate a cake in shades of blue with a relief texture that imitates waves; for a Provence theme, a lilac palette is used, etc.

Beautiful birthday cake designs

The ombre style, found in all kinds of wedding decoration elements, including the cake, will help demonstrate the excellent taste of the modern couple of the hero of the occasion. The main festive dessert, made in a gradient of one or several shades at once, will become the “highlight” of the banquet. The choice of the main color of the celebration, sweet bar or birthday cake remains only with the newlyweds.

If desired, a classic multi-tiered cake can be turned into a work of confectionery art. For example, if each layer of the dessert is decorated with one shade, smoothly transitioning into different degrees of intensity, or with different colors of the rainbow, the result will be an original decor not only in appearance, but also in cross-section. The color palette for the ombre style includes all sorts of tones of colors such as pink, turquoise, green, purple, and yellow. The main thing is that the design of the sweet matches the color and decor style of the celebration.

Decor options

The ombre effect can be applied not only to the external design, but also to the cake layers. To do this, you just need to add food coloring to the dough while kneading. While the cake is in one piece, such a move will be unnoticeable, but after cutting the dessert, the highlight of the design will appear.

There are the following options for decorating the side of a dessert with an ombre effect.

  1. Pastry bag or syringe. You can make simple patterns from the cream, which, in combination with the ombre effect, will sparkle with new colors. At the bottom of the dessert, curls or roses of rich color are drawn, followed by a paler layer, and so on until white.
  2. With spatulas. The surface of the cream cake can be decorated using pastry spatulas. If you don’t have them at hand, you can use ordinary cutlery - a spoon, fork or knife. By making different movements, you can gradually learn to create the desired texture.
  3. With a spatula. The surface of the cake can be made smooth by using a flat spatula or spatula. This option is usually chosen if you plan to add other decoration elements.

You can experiment with different methods, especially if the cake is multi-tiered. For example, the lower part can be decorated with cream patterns, and the upper part can be left smooth, adding additional decor.

The ombre effect can also be applied in this way: the lower part is completely decorated with a rich shade, and then a smooth transition to pale tones is made diagonally, that is, the closer to the top, the narrower the part is painted. It turns out that the colored ombre comes from below, and white from above.

Decorating ombre cakes is most often done with flowers. They can be made of cream, marzipan, chocolate or mastic, but live buds look especially impressive. If you spend a little more time, the plants can also be arranged in order from pale to saturated shades. Another popular decor option for this dessert is fresh fruits and berries, but you need to choose them in the same shade as the cake.

For example, black currants, grapes, blueberries or blackberries are suitable for a purple base, strawberries, cherries and raspberries for a pink or red base, peaches, oranges or mangoes for an orange base, etc.

From mastic

Mastic is an elastic confectionery mass that can be purchased ready-made or made independently. To decorate the dessert, a layer is rolled out of it, like dough, which is used to cover a prepared stack of cakes. The surface is leveled, resulting in almost perfect edges.

If you have chosen an ombre mastic cake for your celebration, please note that when decorated with this material, one tier can be decorated with only one shade, since the cakes are covered with a single layer.

To emphasize the ombre effect, you can additionally cut out many small decorations from this paste - butterflies, flowers, etc. They cascade along the side, starting with white at the top and ending with a rich color at the base.

From cream

Ombre cream wedding cake is more common than others. The reason for this is simple: even on one tier you can use several shades at once, resulting in a more interesting decor. In addition, it is possible to create an interesting texture on the cream, in harmony with the smooth transition of shade from pale to rich.

When choosing this option, it is important to ensure that the cream is not too greasy or heavy. Since it is used in large quantities for decoration, guests may simply not be able to finish their piece, especially if the main menu was high in calories.

How to make an ombre cake cover. Photo lesson

How to beautifully and evenly assemble the cake and evenly cover it with cream to get an excellent preparation for further decoration has already been discussed here and here. This time we will talk about covering the cake in Ombre style. This is a rather self-sufficient type of cake decor; it looks very festive and impressive. A detailed photo lesson was prepared for us by Lyudmila Davlatova. Thanks to Lyudmila’s detailed instructions, even a novice pastry chef can master this technique! So, let's go!

  • assembled cake-blank (see how to assemble it here);
  • turntable (not necessary, but will make your life a lot easier);
  • gel dyes of desired colors;
  • any thick cream with which you plan to decorate the cake (cream cheese, butter cream, recipes can be found here);
  • pastry bags;
  • putty knife.

First, after assembling the cake, you need to cover it with a thin layer of butter cream - this is necessary in order to “glue” all the crumbs and the next layer will lie flat. Apply a layer of cream and put it in the refrigerator for an hour to cool.

At this time, prepare all the necessary ingredients. We divide the finished cream into three parts, each coloring it in the desired shade. I used Americolor Green Mint in varying degrees of concentration and added a drop of black dye from the same company to one part of the cream for the deepest and darkest shade. Fill three pastry bags with cream.

We take the cake out of the refrigerator and place it on the turntable.

We begin to deposit the cream on the cake from bottom to top in a spiral from dark to light shade.

photo 1

In this way, fill the sides and top of the cake with cream, changing the color of the cream from dark to light.

Use a spatula to move a little along the sides of the cake, thereby mixing the shades so that there are no sharp transitions.

We use a spatula along the top of the cake, leveling the cream over the entire surface.

Now we need a metal scraper to level the surface and finally “blur” the color. We place it at an angle of 90 degrees to the sides of the cake and, without pressing too hard, press it against the cake and with the other hand begin to turn the table. Be careful not to remove too much cream; your task is not to remove the excess, but to smear the color. Every time you remove the scraper from the cake, wipe it clean with a napkin so that subsequent strokes do not spoil the surface.

We make a couple of such turning circles, then use the same scraper to level the top.

That's it, the Ombre style coating is applied, the cake is ready for further decoration.

Decorate with herbs and berries if desired

The cake is ready! It's not difficult at all, it just takes a little practice!

Before making an ombre on the cake, when mixing the mastic mixture, food coloring is added to it. If you don’t have time, you can purchase a ready-made set of pastes with a transition from light to rich shades. Marina Anisimova

With flowers

Most often, flowers for decorating a dessert with an ombre effect are made from cream: a rich shade is used below, and then gradually paler. You can also do it more economically - start from the top, gradually adding food coloring to the cream. In this case, you need to be sure that the decor will not slide under its own weight during the decoration process.

To make a spectacular ombre cake with flowers, you usually make decorations from fondant. To do this, a layer is rolled out, from which either small whole inflorescences or petals are cut out to form rose buds. It is advisable to use such flowers on a mastic basis or on a thick, non-greasy cream.

With fruits

Ombre cake with fruit is not only delicious and beautiful, but also economical, since the pastry chef does not make decorations by hand. Most often, fruit slices and berries are located along the edge of each tier, where there is free space.

An abstract composition is created on top of the dessert, which can include live or edible flowers and leaves. Small fruits, such as figs, small apples or tangerines, can be used whole for decoration. This design looks especially appropriate on cakes with fruit or yogurt filling. When the cake is cut, it looks full and harmonious, and almost all guests like the taste combination.

Attention! Find out how to decide on the filling and calculate the weight of the cake so that there is enough for all guests.

'Naked' cake

“Naked” or “rustic” cake is one of the latest trends in confectionery fashion. Simplicity and naturalness are the main characteristics that need to be kept in mind when creating this dessert.

It got its name because of the design features: the cakes and cream layer are not covered with anything on the sides and are exposed to everyone. No covering with mastic or colored sprinkles, all layers must be visible.

Naked cake - fashion for everything natural and natural

A “naked” cake strives for naturalness, so when preparing and decorating, everything that can be obtained directly from nature is used. Put aside the bright food colorings, brown and white with splashes of red and orange will be the main palette. The classic version, which is also the most visually impressive, is brown cake layers interspersed with snow-white cream, although you can use cocoa or berry juice to add color.

Fresh fruits and berries are actively used to decorate the cake, as well as - a special feature of this dessert - fresh flowers and leaves. However, you can put anything on the cake that you consider quite natural and rustic.

In the next video you can see the design of a 'naked' wedding cake. Although the pastry chef comments on her actions in English, the process is very clear, so everything will be clear to you. Pay attention to the supports that are inserted inside the torus to ensure stable multi-tiering:
