After defrosting, whip the cream until fluffy and apply to the cakes . - Preheat the oven to 160°C. Grease a 25cm diameter cake pan, dust it with flour and line the bottom with parchment paper.

Using a stand mixer or hand mixer, cream the butter and sugar until fluffy. Add the eggs, one at a time, mixing well after each addition, and add the vanilla.
- Sift flour, baking powder and salt into a separate bowl. Add flour to butter mixture in 4 additions, alternating with milk, mixing well after each addition.
- Melt the chocolate in a bowl over low simmering water, stirring until almost melted. Remove the chocolate from the water bath and continue stirring until it is completely melted. Pour warm chocolate into the dough and stir.
- Pour the batter into the prepared pan and bake until a cake tester inserted into the center comes out clean, about 45 minutes.
- Cool the cake for 30 minutes, then remove from the pan to cool completely. Wrap the crust and store in the freezer or at room temperature until ready to assemble.
- To assemble, cut the sponge cake horizontally into three pieces. Apply about 2/3 tbsp. cream on the bottom cake and 1/3 tbsp. cream for the next cake.
- Sprinkle the berries onto the cream-covered bottom cake layer and cover with the second cake layer, cream side down, until the berries are completely pressed into the cream.
- Repeat the same with the next cake. Apply cream to the top and sides of the finished cake and level. Place in the refrigerator.
Mastic
To tint mastic
, add a little food coloring to a small bowl of mastic (about 0.5 tbsp) and knead well. Combine a small colored piece with a large portion of mastic (weighing about 1.3 kg for a cake with a diameter of 35 cm, 0.7 kg for a tier with a diameter of 25 cm, 0.45 kg for a tier with a diameter of 20 cm and 0.2 kg for a tier with a diameter of 15 cm) and knead by hand or using a mixer with a paddle attachment (a hand mixer will not work). This cake uses a darker green fondant color on the bottom tier, gradually fading into a light green top tier.- To color the fondant more intensely

Lightly dust your work surface with powdered sugar and begin rolling out the darkest piece of fondant for the bottom tier, 35cm in diameter. Roll it out into a 5mm thick circle. If air pockets appear on the mastic, poke them with a pin to let the air out and gently rub the hole with your finger
. Cover the remaining tiers of the cake with fondant in the same way. Using a special cutter, cut out the leaves from the mastic scraps and set them aside (it’s okay if they dry out). Cake tiers
To assemble all the tiers of the cake, they need to be reinforced with wooden rods. Insert a wooden rod into the lower tier, 10 cm from the edge. Mark the top of the cake on the rod and pull it out. Cut the rod along the mark and cut 4 more rods of the same length (with these your cake will stand up straight). Insert the rods from above in a circle into the lower tier and carefully place a cake with a diameter of 25 cm on top. Strengthen the tiers with a diameter of 25 and 20 cm in the same way. When transporting a cake of this size and weight, it is recommended to move it in two parts and finally assemble it on site.
