  • 200 grams of flour.

Mix the eggs with sugar and beat very well with a mixer until very fluffy. Next, add the flour not all at once, but gradually, in very small portions, constantly mixing well.

In this case, sliding metal baking pans will be very convenient for baking cakes. They are very convenient and easy to adjust from the smallest to the largest diameter, which is what we need. Line a baking tray with baking paper, place the mold on it and pour in the prepared dough.

Bake in an oven preheated to 180 degrees for about 20 minutes until done. You can check the readiness by pressing the finished biscuit with your finger, if it takes its original shape, then it is ready, or pierce it with a match, if it remains dry, then the biscuit is also ready.

In this way, we bake the required number of cakes of different diameters for the first and second tier. When the sponge cake is ready, take it out, turn the mold over, remove the paper and take out the finished cake. If it turns out to be quite voluminous, it can be divided into two by cutting lengthwise with a regular knife.

How to assemble a two-tier cake

Take the first cake of a larger diameter and cover it with cream about 1 cm thick. Cut the fruit. I used canned peaches. You can use anything you like (kiwi, bananas, mangoes, etc.). We spread all this beauty on a layer of cream, and also add already chopped walnuts.

Cover the top with a second cake of the same diameter. Then we repeat everything again. The number of layers depends on how tall you want the cake to be. I made 2 layers of large diameter and 2 layers of small diameter.

When the base is already assembled and looks like a cake, it must be completely covered with the remaining cream. To do this, coat our cake thoroughly on all sides and very carefully level it with a pastry spatula. If you don't have one, you can use a simple wide knife.

Filling for two-tier cake | Cream and syrup

To layer between the sponge cakes and level the entire base, we will use a cream based on whipped cream and yogurt. To do this, whip cream with a fat content of at least 23% until it holds its shape well, and mix with yogurt in a ratio of 1:3 (3 parts whipped cream and one part yogurt). Grind the walnuts. You can use absolutely any nuts according to your desire and taste.

To prevent our future cake from being dry, our sponge cakes must be soaked. To do this, cook the syrup. 1 glass of sugar in 800 ml. water and a pinch of citric acid, cook for 8 minutes. The syrup should be quite thick.

Next, we will make an impregnation from this syrup, adding boiled water and a pinch of vanillin. We add the amount of water depending on the degree of sweetness we need for the cake. We soak all the biscuit cakes with the resulting mixture.

Decorating a two-tier cake

In order for the chocolate to spread well, it must be liquid enough. To do this, we need to melt it. This can be done in a water bath. Hold the container with chocolate over boiling water or in an oven preheated to 80-100 degrees.

When the chocolate melts, mix it with cream (not whipped). The proportion is approximately 2:1 (2 parts chocolate and 1 part cream). Mix everything thoroughly.

Next we start pouring chocolate. Take a mixture of melted chocolate and cream prepared in advance. If you have one, you can use a piping bag with a tip. If not, then just take an empty half-liter milk carton and, cutting off one corner, fill it with chocolate.

We start pouring from the center, moving towards the edges. At the very edges, try to ensure that the chocolate does not completely cover the sides of the base, but there are smudges left. It looks very nice. We also cover the first tier of the future cake. Place in the refrigerator for about an hour to allow the chocolate to harden. Now our cake base is ready.
