  1. First you need to separate the eggs into whites and yolks.

  2. Pour granulated sugar into the whites, beat using a mixer until fluffy, add the yolks and beat again. Afterwards, you need to add wheat flour to the mass, sifting it through a sieve, add cocoa powder, poppy seeds and mix well.
  3. Next, you will need to divide the prepared dough into 3 equal parts, preheat the oven to a temperature of 200°C, spread the dough into round molds, put it in the oven and bake 3 cakes for 10-15 minutes. The baked cakes will need to be transferred to a wire rack and cooled.
  4. Then you need to take the butter out of the refrigerator, soften it at room temperature, add condensed milk to it and beat thoroughly until a single mass is obtained. Pour water into a small saucepan, add granulated sugar, pour in cherry syrup, bring to a boil over high heat, stirring continuously, skim off any foam that appears, cook for 25 minutes, then cool slightly, add cognac and stir.

  • cherry – 500 g;
  • salt – ½ tsp;
  • baking powder – 10 g.

Cooking method:

  1. Beat eggs with granulated sugar until the crystals dissolve.
  2. Gently fold in the flour, baking powder and salt to avoid lumps forming.
  3. To bake this cake, it is better to use a slow cooker and bake the cake in it for 40 minutes.
  4. Whip the cream with powdered sugar.
  5. Remove seeds from washed cherries and cut in half.
  6. Divide the cooled cake into two, spread with cream, arrange the berries and again with cream.
  7. Cover the filling with the second cake layer and spread with cream.
  8. Melt the chocolate and pour over the top of the cake.

DIY two-tier masterpiece

For a special occasion when many guests are planned, the best dessert is a multi-level cake. You will also need berries to decorate it.

Ingredients:

  • classic sponge cake - 3 cakes with a diameter of 26 cm;
  • sponge cake with the addition of red dye - 3 cakes with a diameter of 18 cm;
  • mascarpone based cream – 1.2 l;
  • berry mix of raspberries, blackberries and blueberries – 600 g;
  • chocolate figures – 150 g;
  • coffee – 200 ml;
  • sugar – 50 g;
  • liqueur – 30 ml.


Cooking method:
  1. Make an impregnation from coffee, sugar and liqueur and cover each biscuit layer with it.
  2. Assemble the bottom part of the cake from cakes of larger diameter, coated with 1/3 of the cream.
  3. Place a red circle of biscuit in the center of the top and, by analogy, assemble the second tier of the product, not forgetting about the filler.
  4. Cover the dessert on all sides with light cream.
  5. Decorate with berries and chocolate figures.

In principle, the decoration can be supplemented with other elements (nuts, cookies, etc.). However, the main thing is not to overdo it. Confectioners recommend leaving 60% of the surface of the dessert free so that the cake does not seem overloaded.

Combination of fruits, berries, creams, interesting ideas and additives

Tips for combining and placing fruits and berries:

  1. Even chaotically arranged fruits and berries look beautiful on a lush layer of cream.
  2. Small fruit fragments are laid out along the edges, and large ones in the center.
  3. Kiwi circles are used to frame the composition. They are placed overlapping.
  4. An interesting option: do not mix the fruits, but arrange them sectionally in the form of triangles, the vertices of which are in the center of the cake.
  5. A composition of fruits and berries can be placed in the center of the cake, or a wreath can be formed along the edge of the confectionery product.

  12. Various shapes are cut out of thick plastic apples: hearts, stars, etc. You will need special food-grade cutters or devices for cutting out cookie dough.
  13. The edges of the cake are masked with thick cream: protein, custard, butter. The sides are formed from long cookies ("Children's" is suitable). Wafer rolls are used for the same purpose.
  14. Whole large berries are combined with soft chocolates.
  15. Delicate ensemble - raspberries, blueberries and macaroon cookies. The treat is selected by color.
  16. Before placing large pieces, they are dipped in melted chocolate or syrup, and then in confectionery topping or coconut flakes.
