Preparation

  • Beat eggs into a saucepan, add sugar and heat in a water bath to 35°C, stirring continuously. Remove from heat, and with a blender at full power, beat the egg mixture until fluffy.
  • Divide the flour into three parts, mix one with cocoa and sift through a sieve. Add to the eggs and use a spatula to mix until smooth.
  • Melt half the butter in the microwave, carefully pour into the dough, add the remaining flour and mix.
  • Pour the dough into the mold. Preheat the oven to 170°C and bake for 30-35 minutes. Cool until it gets cold, prepare the cherry sauce.
  • Pour 50 g of sugar over the cherries, you can do this in advance, you need to get 170 ml of juice. Strain, cook for 5 minutes, add cherries to the syrup and let them cool.
  • For chocolate cream, mix cream and sugar, heat and add grated chocolate. When the mixture becomes homogeneous, cool and put in the refrigerator for half an hour.
  • Cut the cakes into two parts lengthwise and soak in cherry syrup. Beat the cream for 1 minute, cover with a layer and lay out the cherries.
  • For the second cake, beat 300 ml of cream with powdered sugar, apply and add cherries, cover with a third layer.
  • To decorate, whisk the remaining cream with powder and brush over the top and edges of the cake. Grate the chocolate, sprinkle with shavings and garnish with cocktail cherries. Before serving, leave the cake in the refrigerator for 3-4 hours to soak.

Preparation

  • Take a deep bowl and sift the flour through a sieve.
  • Remove the butter from the freezer and grate it on a fine grater.
  • Mix the butter and flour with your hands into a homogeneous mass.
  • Pour water, vinegar, salt and egg into a separate bowl and whisk.
  • Pour the egg mixture into the flour and butter and knead the dough.
  • Divide the dough into 12-15 parts and place in the freezer for 3 hours.
  • While the crust is cooling, prepare the custard.
  • Preheat the oven to 200°C. Take out the balls of dough one at a time, quickly roll out as thin as possible and bake on a silicone mat or parchment for 5-7 minutes until golden brown.
  • When the cake is ready, cut it to the desired size using a plate.
  • Grease the cakes with cream, be sure to coat the sides and top. Chop the remaining baked dough and sprinkle Napoleon on all sides.
  • Take the cake to a cool place for a day, cut into squares and serve.
