Preheat the oven to 180-200°C. Grease a large baking dish with vegetable oil.

- Fry small pieces of beef with onions in oil. After adding the tomato puree, continue cooking for about 6 minutes;
- At the very end, throw flour into your frying pan;
- Transfer the beef to a baking sheet. Add all the remaining ingredients there and bake the meat until a crust appears. When serving the dish, you can use not only the berries that were used in cooking, but also fresh ones. This will highlight the sweet and sour taste of the beef.
Beef balls in jelly
You need: four hundred grams of meat, 100 grams of white bread, a teaspoon of starch, two spoons of milk, 1/3 cup of cream, half an onion, ground pepper, salt, four hundred grams of meat broth, four teaspoons of gelatin, herbs and one carrot.
- Form balls from minced meat (a mashed mixture of meat, bread in milk, salt, pepper and cream), and set to simmer in beef broth;
- Cool the finished balls, put them in molds with carrot slices;
- Pour in the broth and prepared gelatin. When everything has hardened, you can decorate your dish with sprigs of dill or basil. The finished balls are traditionally placed on a round plate on a layer of lettuce leaves.
Cold beef with mushrooms and cucumbers
Required products: 300 grams of boiled beef, 150 grams of mushrooms, a couple of pickled cucumbers, an onion, a quarter glass of chopped parsley, half a glass of vegetable oil, a few tablespoons of vinegar about 3%, salt, a little granulated sugar and a spoonful of mustard.
- Cut the finished meat into thin slices;
- Chop the mushrooms and cucumbers into strips, and place the onion and parsley on the meat, having previously crumbled it even more;
- Whisk the vegetable oil and spices well, pour the resulting liquid over the meat. Place your dish in the cold, placing slices of cucumbers and mushrooms on top of the beef.
Rolls with red wine and bacon
Find: 4 slices of peeled meat, the same number of pieces of bacon, 3 medium onions, 4 small pickled cucumbers, spices to taste, 3 tablespoons of olive oil, 250 grams of stock cubes, 120 grams of wine, adjika or mustard of your choice.
- Cut the meat into plates, brush with a layer of adjika or mustard;
- Place bacon, chopped onion and cucumber on top, season with spices;
- Roll the beef into rolls, tie for greater density, or pierce with skewers. Fry on both sides until golden brown;
- Place the meat in the pan. Fill with broth with cubes and red wine, simmer until tender.
Beef stew with tea
For cooking you will need: five hundred grams of beef pulp, three spoons of vegetable oil, salt and pepper powder, a clove of garlic, a large sour apple, three teaspoons of dry black tea, water, 1/2 cup of meat broth.
- Cut the cleaned meat into two to three centimeter cubes. Brown a little in sunflower oil, sprinkle with salt and pepper;
- Add crushed cloves to the roast and simmer over low heat. During the process, be careful not to burn the beef. If all the liquid evaporates prematurely, add water;
- Sprinkle the meat with tea, place thick slices of green apple on top, pour in a little broth and cook for about a quarter of an hour. Place it on the table with apple sauce, and you can eat this meat with boiled rice.
Meat chestnuts
Ingredients: 400 grams of beef, 80 grams of pork, 50 grams of white bread, onion, salt, pepper and 4 tablespoons of clean water. For the filling, prepare: 100 grams of Cheddar, 8 pieces of prunes, 160 grams of dry wheat bread and fat.
- Pass the soaked bread, both types of meat and onion through your meat grinder. Add water, spices and salt to the mixture. Stir the resulting minced meat well;
- Make balls out of it (at the rate of two per person), place cheese cubes and pitted prunes in the depressions;
- Roll the balls in dry bread and fry in plenty of fat until light brown. This second dish is usually served with stewed carrots or fried potatoes.

2 kg of pork ribs, 3 onions, 1 glass of tomato juice, 1 head of garlic, 110 g of smoked paprika, 1 jar of Dijon mustard, 2 tbsp.
l. honey, 1.5 tbsp. l. sugar, 4 tbsp. l. salt, cumin, 55 ml Worcestershire sauce, 1 tbsp. l. balsamic vinegar, 2 tsp. Tabasco sauce, hot pepper. Preparation:
Prepare a mixture of paprika, sugar, salt and hot pepper and rub it over the ribs. Finely chop the onion and garlic and mix. Place half of the vegetables in a frying pan and place the meat rubbed with Dijon mustard on top. Cover with foil and bake for 2.5 – 3 hours until done. Fry the remaining onion with honey, tomato juice, spices and sauces. Then remove the foil from the pan and pour the onion-honey sauce over the ribs. Place in the oven again for 20 minutes.
Duck carpaccio with foie gras and pears
To prepare you will need:
• duck breasts – 4 pcs. • foie gras pate – 200 g • pears (preferably Duchess variety) – 4 pcs. • butter – 2 tbsp. • thyme – 4 sprigs • rosemary – 4 sprigs • balsamic vinegar • olive oil • powdered sugar – 1 tbsp. • salt, pepper to taste
Remove skin and excess fat from duck breasts (they will not be needed in this dish). Cut the duck breasts in half lengthwise so that they “open up” like a book. Cover the breasts with a double layer of cling film and pound to a thickness of about 0.5 cm. Season with salt, black pepper, finely chopped rosemary and thyme leaves.
Place foie gras inside each breast and roll very tightly. Wrap in film, then in foil and refrigerate for 2 hours until completely set.
Peel and core the pears, cut into small cubes, place on paper towels and dry.
Melt the butter in a frying pan, add the pears, sprinkle with a teaspoon of balsamic vinegar, sprinkle with powdered sugar and fry over moderate heat for one minute. Remove from heat, remove pears using a slotted spoon and cool.
Make a dressing from the liquid that remains in the pan: add half a teaspoon of balsamic vinegar, oil, a pinch of salt and ground pepper to taste.

You will need:
1 kg of potatoes, 1 kg of chicken thighs, 3 onions, 250 g of hard cheese, 300 ml of mayonnaise and a little water, sea salt, ground pepper mixture.
Preparation:
Place onion rings, potatoes and meat in separate bowls and mix with mayonnaise. Leave to marinate for half an hour or an hour. Don't forget to add salt and spices to make it tastier. In a baking dish, place first the potatoes in layers, then the onions, and then the meat. Pour in a little water and bake in the oven for 35 - 40 minutes. Sprinkle with grated cheese and return to the oven for ten minutes.
Stuffed Eggs Caesar
A great idea for a holiday appetizer is to make a version of a banquet dish based on the theme of everyone's favorite Caesar salad.
To prepare you will need: • toasted white bread without crust – 6 pieces • butter – 100 g • large chicken eggs – 10 pcs.
To serve: • romaine lettuce leaves • grated hard cheese (eg parmesan)
For dressing: • anchovy – 2 fillets • garlic – 1 clove • mayonnaise – 5 tbsp. l. • Dijon mustard - 1 tsp.
Grind white toast bread in a blender into coarse crumbs. Melt the butter in a deep frying pan, add a little salt and mix with the crumbs, the butter should cover them evenly. Fry until crisp and cool.
Boil water in a saucepan, add plenty of salt. Then place the eggs straight from the refrigerator into boiling water. Bring to a boil, cook for 1 minute, remove from heat and keep in water for about 10 minutes. Then cool under ice water, carefully peel, and cut lengthwise into two parts.
While the eggs are boiling, make the dressing. Grind the anchovy fillet with a clove of garlic in a mortar, mix with mayonnaise and Dijon mustard.
Mash the egg yolks and mix them with the dressing, salt and pepper if required. Divide the yolk mixture into the egg white halves. Place the eggs on a plate lined with large romaine lettuce leaves, top with crispy crumbs and grated cheese, and serve immediately.
Pork shish kebab in the oven

You will need:
2 kg of pork pulp, 4 onions, 1 pack of barbecue spices, 1 tbsp.
l. salt, 2 tbsp. l. sugar, 1 lemon, 3 tbsp. l. vinegar. Preparation:
Cut the onion into rings, place in a bowl, pour boiling water (2 cups) mixed with salt, sugar and lemon juice. Cut the meat into pieces, beat it well, rub with salt and spices, and sprinkle with vinegar. After one hour, place the squeezed pickled onion into the baking sleeve, then the meat, stir, tie the free edges with threads. Make several punctures in the sleeve. Bake for an hour and a half at maximum temperature.
Berry-yogurt jelly
To prepare you will need:
• 230 g frozen berries • 700 g natural yogurt • 3 tbsp. gelatin powder • 3 tbsp. l. Sahara
Boil the berries, without defrosting them, in half a glass of water for 5 minutes. Dissolve 2 tablespoons of gelatin in 70 ml of warm water. Place over low heat and heat, stirring, but do not bring to a boil. Let cool. Mix melted gelatin with natural yogurt, add sugar, mix. Divide into six glasses and refrigerate for half an hour. Soak the remaining gelatin powder in 50 ml of water. After it swells, mix it with the prepared berries. Place on top of all glasses and return to refrigerator until set.
Chicken in oranges
A hot dish for gourmets, and the citrus marinade gives the meat a festive taste!
You will need:
4 chicken legs, 3 oranges, 2 tbsp.
l. vegetable oil, 1 tsp. ground turmeric, 3 tbsp. l. honey, 3 cloves of garlic, sea salt, coriander. Preparation:
Remove the zest from all citrus fruits. Squeeze juice from two oranges. Cut the remaining fruit into thin slices. Mix the juice and zest with honey, garlic, salt, oil and ground spices. Pour the resulting marinade over the chicken and leave overnight. Bake in a deep pan, covering with orange slices and pouring over the marinade.
Elegant curd roll
A beautiful multi-colored roll will delight children and adults.
You will need:
6 eggs, 6 tbsp.
vegetable oil, 6 tbsp. flour, 3 tbsp. 20% cream, 2 tsp. baking powder, 3 tbsp. chopped spinach, 2 tbsp. paprika, 3 tbsp. grated cheese, 400 g curd cheese, 1 tsp. dry garlic. Preparation:
Beat the yolks with a mixer until stiff peaks form, and divide the yolks into three bowls. Add cream, flour and baking powder to each bowl. Add spinach to one, paprika to another, and cheese to the third, arrange the whites and mix.
Place the dough in strips on parchment and bake for 12 minutes at 200 degrees. When the cake has cooled a little, put the cream cheese and garlic filling on it, roll it into a roll using film and put it in the refrigerator for an hour. Before serving, all that remains is to cut.
Pork in a “fur coat”

Meatloaf
An excellent, inexpensive and tasty alternative to cold cuts.
You will need:
250 g chicken fillet, 350 g pork, 1 tsp.
mustard, 3 tsp. paprika, 1 tsp. turmeric, oregano and marjoram, 2 tsp. dried garlic, 50 ml broth. Preparation:
Separately, pass the chicken and pork through a meat grinder, add salt, dried garlic and broth to each minced meat. Add paprika to the pork, and put both containers under film in the refrigerator for 6 hours.
It is more convenient to use food-grade collagen film for baking, which you can then eat. Cut the leaves, lightly moisten them with water and sprinkle with spices. Place minced pork on one, then a second sheet, then chicken.
Roll everything tightly into a roll and put it in the oven at 50 degrees, raising the temperature every 15 minutes. You need to gradually reach 180 degrees, and the roll will bake for about 2 hours.
Duck in honey sauce

Cabbage lasagna with meat
Instead of dough there is cabbage, and the filling is meat and mushrooms. The perfect lasagna for a holiday table!
You will need:
1 fork of Chinese cabbage, 0.5 kg of minced meat, 0.5 kg of any mushrooms, 200 ml of fresh milk, 2 tbsp.
l. flour, 160 ml sour cream, 200 g soft processed cheese, 1 onion and carrot, 2 tbsp. l. vegetable oil and tomato sauce, 55 g butter, 140 g cheese, seasoned salt. Preparation:
Fry the onion with carrots and minced meat in a frying pan. Pour in tomato sauce. Separately, pour the sliced mushrooms into a dry frying pan and stir until the moisture evaporates. Pour milk, simmer for 8 minutes. Add soft cheese.
Line a baking dish with cabbage leaves and sprinkle with grated cheese. Distribute half of the fried minced meat, then the mushrooms. Cover with cabbage leaves, again meat, mushrooms, cabbage. Grease the top layer with sour cream and sprinkle with cheese. Bake in the oven for about an hour.
Julienne with chicken and chanterelles
To prepare you will need:
• 200 g chicken thigh fillet • 100 g chanterelles • 200 ml 10% fat cream • 20 g butter • 50 g cheese • julienne mixture • bunch of herbs
Cut the chicken fillet and mushrooms, lightly fry. Add fried onions from a small bag. Mix the cream with the contents of the 2nd bag (which contains the sauce mixture). Pour the resulting mixture over the chicken and chanterelles. Simmer over low heat for a couple of minutes. Place the resulting mass into small cocotte bowls. Sprinkle with grated cheese. Place in a preheated oven (temperature -180 degrees) for 6-7 minutes.
Giant roll with mushrooms
Magnificent hot “2 in 1” - potato side dish and mushroom filling, wrapped in an appetizing and very tasty roll.

10 potatoes, 300 g mushrooms, 1 carrot and onion, 1 tbsp.

Prepare mashed potatoes, mix it with starch, salt and seasonings. Fry onions and carrots in a frying pan, then add mushrooms. When the filling is ready, add semolina and spices. Line a baking sheet with parchment, grease with oil, and smooth out the mashed potatoes. Place the filling and roll it up. Bake until done.
Festive lavash roll with mushrooms
Cut into thin slices, this roll looks very beautiful and elegant.
You will need:
3 pita bread, 200 g of mayonnaise, a bunch of cilantro, 700 g of mushrooms, 350 g of cheese, butter.
Preparation:

You will need:
500 g chicken, 1 onion, 3 cloves of garlic, 1 egg, 200 ml cream, 150 g cheese.
Preparation:
Beat and finely chop the chicken, mix with chopped onion, spices and beaten egg. Grease the pan with cream, form the meat into balls, place and bake at 180 degrees for 10 minutes. Mix the grated cheese with cream, pour over the chicken balls and put back in the oven for another 15 minutes.
Roast “Goldfish”
Hot roast fish is easier to digest by the body than meat dishes. So, your guests are not in danger of overeating!
You will need:
1 kg of sea fish fillet, 0.5 kg of tomatoes in their own juice, 0.5 cups of dry white wine, 220 ml of 10% cream, a handful of black pitted olives, 1 pod of bell pepper, 1 small onion, 4 tbsp.
l. flour, 5 tbsp. l. vegetable oil, 3 green onions, 1 tbsp. l. salt and sugar, spices for fish. Preparation:
Cut the fish into small pieces, add 1 liter of water mixed with sugar and salt. Finely chop the onion and pepper, fry in oil, add diced tomatoes and dill, chopped olives. Pour wine and mascara until the alcohol evaporates. Pour in the cream, cook until thick. Drain the fish in a colander. Bread the dried pieces in flour and fry in oil. Pour in the sauce, bring to a boil and turn off the stove.
Mexican style holiday salad
