Now “Red Velvet” is a legendary cake, the taste of which can be appreciated without any historical connotations. However, when you know that behind the glamorous appearance there is something more hidden than the fantasy of painting a cake in an unusual color, when you understand that a whole era stands behind the bright color, the taste of “Red Velvet” begins to sound different: more significant, more interesting.

  3. 400 g plain flour
  4. 10 g sugar-free cocoa powder
  5. 1 teaspoon baking soda
  6. a pinch of salt
  7. Wet ingredients:
  8. 115 g softened butter
  9. 350 g sugar
  10. 2 eggs
  11. 250 ml vegetable oil
  12. 1 tsp white wine vinegar
  13. 2 tsp vanilla extract or 2-3 pinches of vanillin
  14. 1 cup kefir 1%
  15. 1/2 tbsp. red food coloring
  16. For cream:
  17. 400 g Philadelphia cheese
  18. 115 g butter
  19. a pinch of vanillin
  20. 450 g powdered sugar
  21. For topping:
  22. several handfuls of fresh berries

Preheat the oven to 180C. Thoroughly grease the pan you chose for baking the cake with butter on both the bottom and sides.

Sift the flour through a sieve and mix it with everything on the “dry ingredients” list. In another container, combine butter and sugar and beat them with a blender. Add the eggs, continuing to beat gradually.

After this, you need to pour vegetable oil, vinegar into the resulting mixture, add vanilla, kefir and red dye. Process the mixture in a blender until smooth.

After this, you can add dry ingredients to the resulting mixture and process everything with a blender again.

Divide the finished dough into 2 or 3 parts (depending on how many cakes you want to get and whether you want to use the cakes, cutting them lengthwise to form a thin layer of dough, or if you want to leave the cakes thick, uncut, as is done in our photo). From each part, leveling it along the bottom of the mold, prepare a cake.

Bake them for 25-30 minutes at 180C. Remove from the oven, let them cool before removing from the pan.

For the cream you will need to mix Philadelphia cheese, butter and vanilla. After this, add powdered sugar. If you feel that the cream is runny, add more powdered sugar.

Grease each of the cakes with cream and place the cakes on top of each other.

Place the cake in the refrigerator for a couple of hours so that the cakes and cream “stand up” and become one.

You can make a cake from cakes coated with cream , or you can go further and cover the entire surface of the cake - both the top and the sides - with cream. In this case, it is most convenient to level it with a rubber pastry spatula.
